Laura created a cookbook, mainly so she would have some of her favourite recipes available at a glance.  She doesn't have many printed copies left, but has posted a few of her favourites here on the website for your benefit. Hope you enjoy them as much as we do. Since John was the illustrator, we thought it fitting to put his photo on the cover! Laughing

Overnight Buns

Overnight Buns

Mix together and set aside for 10 minutes:

1   heaping tbsp. dry yeast
1   cup lukewarm water
1   tsp. sugar

Mix together:
1   cup white sugar
1   cup oil
2   tsp. salt (heaping)
3  beaten eggs
3  cups lukewarm water

Add risen yeast mixture

Add:
12   cups flour - 6 cups at first; the rest 1 cup at a time

Mix well to a stiff dough; knead well.  Let stand 3 hours. 

Knead down and let stand another 3 hours.

Form into buns and place on greased baking sheets (only about 6 to a small cookie sheet--8 or 9 to a large one, unless you want them to run together & pull them apart when cooked) to rise over night.  (I used 3 oz. of dough for large buns and 2 oz. for smaller ones.  They'll be big enough for hamburgers.  You could even make them smaller and have decent sized dinner rolls!) Don't cover with wax paper or anything (it sticks to them & is hard to remove later).  Recipe makes over 3 dozen large rolls.

In the morning, bake at 375 F. (10 minutes or until done.)

If buns are started about 4 p.m., the time works out well, for baking in the morning. 
(Be prepared to stay up until about 11:00 for shaping into buns.)

Microwave Pavlova

Microwave Pavolva

4          egg whites
¾         cup sugar
½         tsp vanilla
1          tsp vinegar

Beat egg whites stiff, add sugar slowly. Beat until dissolved.  Add vanilla & vinegar.

Place on baking dish with sides slightly higher than middle.

Cook on high for 2 minutes.

Leave standing 10 minutes with door slightly ajar.

When cool, decorate with cream and fruit.

 
Hash Brown Casserole

Hash Brown Casserole

1 kg. frozen hash brown potatoes
1 can cream of mushroom soup
1 can cream of celery soup (or cream of chicken)
1 can cheddar cheese soup (or 1 cup grated cheddar cheese)
1/3 cup margarine
1 tsp. pepper
1 tsp. salt
1 1/4 cups sour cream
1 onion, diced
dry cornflakes


Stir all together. Sprinkle dry cornflakes on top. Bake at 325 F. for 1 1/2 hours. This makes a big bowl & is very easy & quick to do. Tastes good too!

 
Cheese Sauce for Cauliflower

Cheese Sauce for Cauliflower

Steam vegetable 10 minutes.

Grate:           4 oz. cheddar cheese
Mix into:       1 can cream of chicken soup

Pour over vegetable.

In saucepan, melt: 2 oz. butter

Crush:            8 soda crackers
Add:              ¼ cup parmesan cheese

Pour into saucepan and mix with butter. 

Pour over vegetable. 

Bake in oven 30 minutes at approx. 350 F.
